Simple to Make
You don’t have to feel intimidated about making a new, tasty pasta dish. You don’t even need to run to the store and load up on a bunch of ingredients. This feta pasta recipe calls for cherry or grape tomatoes, a block of feta cheese, some seasoning and herbs of your choice (many people love salt, pepper, and garlic), and of course, pasta. The nice thing about this recipe is you can choose just about any pasta – whichever one is your preference, whether it’s penne, macaroni, Gemelli, fusilli, or anything else.
The Process
Once you’ve assembled your ingredients, it’s time to get cooking. Bring a medium-sized pot of water to a boil and add the pasta. Follow the directions on the box or package, but most of the time, the pasta should be ready within 10 minutes after you add it. In a baking dish, spread about 2 pints of tomatoes, so they cover the entire surface. Mix in 1/4 teaspoon of salt, 1/4 teaspoon of pepper, and half a cup of olive oil. In the center of the dish, add the block of feta and place it on top of the tomatoes. It helps to flip it over a few times, so it’s coated in olive oil. Next, bake the mixture in the oven at 400 degrees Fahrenheit for 35 minutes. By this time, the feta cheese should be melted.
Adding the Pasta
Once the tomatoes are ready, add two garlic cloves and 1/4 cup of chopped basil, if desired. Next, drain the cooked pasta and add it to the tomato mixture. You can garnish it with more fresh basil if you’d like.
